I remember my mom being really great in the kitchen. She had a slew of recipes and could cook and bake like the best of them.

She has her staple dishes…some passed along to her from her mother, and some creations that she made herself. I remember a designated cupboard in our kitchen for all of the cook books. Books she had purchased or received, as well as loose leaf sheets of paper with her own recipes.

I’m sure when I was younger I thought that I wanted to be a great cook just like her.

And here I am, almost 42 years old. Yes, I have a cupboard of cookbooks, but if you asked me, I’d much rather do take out than cook or bake! LOL

Add kids into the mix and obviously I had to learn fast. I started making things from scratch to cook meals for the boys. And the random time I would even bake. But baking was never a strong suit of mine. I’d either overcook it so it was dry, or not follow the recipe properly. (I know, it really isn’t rocket science).

Now my kids are old enough to want to help out in the kitchen. And one thing they have grown to love to do is bake. I’ve tried a few different recipes here and there but one thing that is a kid favorite in my house is Banana Muffins.

So when we get those brown ripe bananas going on, my oldest says he wants to make muffins. So of course I oblige. I have found a few great banana bread/muffin recipes from various sources, including a great one from The Nutrionnaire. And while that recipe is amazing, the one I always fall back on is the recipe that came directly from my mom.

It was a staple in my house growing up, so of course I want to keep it in the family and have my kids enjoy it just as much as I did.

We made them this weekend and let me just say they were a hit. The boys loved them. And nothing makes a mom happier than seeing their kids enjoy the food they make!
