Meal planning. It really isn’t as easy at it sounds! Sure, some families meal plan for their entire household. I have a hard enough time trying to meal plan for myself!
As I’ve written before, I started a new health and eating lifestyle last year and I do my best to stick with it on a daily basis. Some days are harder than others, and some days I don’t track my food at all. With a busy Mother’s Day weekend last weekend that also included two birthday celebrations (and of course lots of chocolate cake), I felt I went a little off track and wanted to regroup this week.
I decided that this week I need to ensure that I ate properly everyday for each meal, and tracked and logged my food ensuring each meal fit my macros. There are certain products and foods that are my go-to’s that offer a nice amount of protein and carbs for each meal. And one of those products is our go to for dinner options for the entire family. I’ve written about it before and I’ll write about it again, there ain’t no pasta like Skinny Pasta!
I honestly can’t stand when people tell me they won’t eat pasta because of the amount of carbs. Well, if you want to have pasta back in your life, you can with this!
On another plus side, not only can the High Protein Linguine fit my macros, but it is a fit for my kids too. They love pasta (all carbs really; what kid doesn’t), and it makes me feel so good that they getting a nutritious meal that is better for them. So not only is it great for me to be able to fit it in my day, but also a great choice for my sons and especially before that big hockey game.
I was so excited to make it for dinner last night and it turned out so good! Last week I took to my Instagram page and asked for all my readers help me decide what recipe to make with my linguine. There were so many amazing ideas it was hard to choose. The chicken lover and sauce lover in me chose both! And now, I want to share my recipe with all of you.
What you need:
1 package of Skinny Pasta High Protein Linguine (frozen), Basil Pesto sauce (I used PC Splendido), grilled chicken breast (pre-cooked). (I portioned out a specific amount of pasta and chicken for my macros; you can use as little or as much as you want for your plate).
What you do:
Bring a pot of water to a boil. Add linguine to boiling water and stir softly to separate the pasta. Boil for 1-2 minutes (YES THAT’S ALL!). Drain pasta and rinse. Place back in pot and add 1 tablespoon of pesto sauce and stir together. Add your grilled chicken pieces, another tablespoon of pesto sauce, and mix. DONE AND DONE.
That is IT!! How easy is that? A meal under 5 minutes is a mom’s dream come true really…
